Beetroot hot chocolate


This is dedicated to all you single people out there who will be spending Valentine's day alone. A hot chocolate full of loveliness and kindness. What more could you need?! Oh wait... some heart shaped cookies too, of course. 

I spotted these raw cookie sandwiches from the Purely Twins on Pinterest and, after seeing how accessible the ingredients were (no extra purchases required) and how simple they were to make, I knew I had to create them myself.
I modified the ingredients. You can see the recipe here but for the cookie I used walnuts, pumpkin and sunflower seeds, cacao powder, honey, agave syrup and peanut butter. With the added peanut butter not only does it help the mixture stick together but it tastes amazing.



As for the hot chocolate. You will need...

Beetroot,
banana,
cacao powder,
honey,
milk
Greek yogurt (optional)

What to do...

Change into your pyjamas. Place all the ingredients into a blender and mix together. Pour into a pan and leave on the hob on a medium heat to warm up. Just when it starts to bubble, take off and transfer to your favourite mug and top with a few tea spoons of Greek yogurt.
Get cosy on the sofa in front of the television and sip (and nibble if you have the cookies too) to your heart's content
