Left over rhubarb from my garden always results in one thing: Cookies.What's so great about the ones above is that they do not involve any sugar, any butter or any 'eurgh, I feel so fat' complaints once one too many have been consumed. Instead, these cookies are entirely healthy and delicious. In fact, as soon as I ate one today, I knew I had to share them with you.
The cookies would prefer it if you made space for them in your fringe but, in order not to eat them cold, you can leave them out a bit before eating. They are happiest when satisfying your sweet cravings, filling your peckish stomach when you're in need of a snack, or when taken on a journey with you to be munched on when on the go.
